My first time using a DMX control system. I have installed Freestyler for the first time. I am using a Generic USB interface, which interface should I chose from the list on the Setup window?

Even if Generic the interface should follow a brand or protocol. You would have to select an interface that matches yours. If you dont know that info then you are gonna have a long go of having to try every interface in the list.

OK, so assuming that I have to go the long route and try all the interfaces on the list, how will I know when I hit the right one?

Best I can suggest is hook up one instrument, set the interface, select the instrument and try the various functions. If the instrument responds correctly then that interface is probably the correct one.

You should get an error on all wrong ones and no error on correct one

Can you show us the interface you bought ?

You can try first "enttec open DMX", it's seem to be the most popular interface.

You can also try to find the interface in the Microsoft Windows "device manager". For exemple, the enttec open DMX act like an COM port.
