hello i have some led lights that use three tilt scanners, so i wanted to know if there was a way i could have three sliders i could assign as tilt sliders and is there a way that i can take a gobo channel and reverse it so the first gobo starts at 255 and carries on to the last gobo at 001?
Please can someone help me as im quite new to freestyler

no the 3 tilt channels on one Fixture file isnt possible you need to create 3 differnt fixture if you like to have this...
examples can be found on the freestyler WIKI as combined Fixture.
or you can use the Sliders on the right side of freestyler.
and for the inverted Gobo you can do this in freestyler.
you need to select the fixture.
open the sliderpanel on de right side.
press rightmouse button on the Gobo slider.
and enable Invert..

i have managed to combine the tilt movements onto separate fixtures which has made it much easier
But i also wanted to know if there was a way i could have a blackout on the fixture or would i have to create a scene turning all of the lights off as there is no shutter or dimmer on the lights?

The way with separating fixtures is also the way I would have done it.

Regarding black out.
There are normally a place on the color wheel where it is "Black" color or "Off". Place this on the shutter channel "Closed" and then place the white color on open.
I don't recall if will always go on white when you go out of black-out but I think so.

You might consider using submasters. That way, you could create sequences controlling specific parts of the fixture.

for the blackout use a macro of the colours
ch5- 255 ch6-255 ch7-255 will give u a blackout
