Just curious if there is a way to create your own shapes then save them to the drop down menu that already has a few pre-set ones like "figure eight" and "circle" and whatnot?

yes you can edit and save the shapes:
read the "Pan/Tilt - Beizer Shapes" topic in the Freestyler program: Help --> Contents
