The big lighting questions: what and why?

Hi. I'm not sure if this is the right forum, but it seems the best spot for it...
I'd like to ask the big questions about lighting - what do you do and how do you set up FreeStyler to achieve that... and why is that the best choice?
I've read quite a bit about creating sequences and putting cue lists on submasters, override buttons, etc. but it's mostly from a technical point of view for people who already know what they want to do.
I'm new to lighting and would LOVE to hear some people share what their process is for both setting up shows and controlling them live.
So, walk me through your steps (big picture is fine for now if you don't me asking for detail later).
- What sort of sequences do you make?
-- and what for?
- How do you set up your controllers and why?
-- so what buttons/faders are you pushing/sliding during a show - and what for?
This sort of thing would be great - and I'd be happy to create a wiki page to collate some of these ideas.
To set the scene a little more... I'm setting up lighting for our church.
We only have fixed RGB LED lights at the moment, but will likely upgrade to more fixtures in the future.
We want to add some visual interest to match the mood/feel of the service at the time - upbeat songs, slow songs, preaching (speaking).
So what sorts of things would you recommend we set up (this is a second question, I guess)?
