well i can also tell you that the flickering is worse with the Velleman then the Enttec Open Interface

What does it mean to change the "channel address" to 5? How do I do that?

Each colorstrip is 4 channels of dmx so if your first fixture is on channel 1 then the next fixture should be addressed as channel 5. If that fixture uses 4 channels then the next avalible channel will be 9 and so on.
To change the channel address you should refer to the user guide.
I will point out that you can have identical fixtures on the same channels and then will then both read the dmx signal a react at the same time.
You cannot ever overlap channels as this will cause strange thing to happen (it won't damage anything though).

I think I'm going to order the Enttec Open DMX for Sirs-electronics. It's about $56.00 there. The only thing is that Enttec is a 5-pin connection and all my cables are 3-pin. Will the performance of the Enttec be bad if I use a 5-pin to 3-pin adapter?

Followup: I have replaced my OpenDMX with a ProDMX, and once I used the Pro utility to change the refresh rate to 20khz (is that the unit? I forget...anyways, from the default 40 to 20) the problem with the Colorstrips (and similar problems with other fixtures) went away.
So in summary, if you use the OpenDMX, avoid color mixing. Opting for the ProDMX will give you full functionality once you tweak the output rate.
