What would I need to control (i.e. individually address) LEDs in 2x5m/30 LED/m (total of 150 LEDs) strips?

New to LED strips but can see this perfectly in a DMX environment. Thanks

In extension to the above would it be possible to control a 82 LED wide and 90 LED high matrix (total of 7380 LEDs - WS2813) with FreeStyler? What controller would I need?

You will need something to convert DMX signal to the serial signal which WS2813 use.
I don't know is that exist else you have to build that your self.

The 7380 LEDs can not be controlled by freestyler.
FreeStyler have 1024 channel and a LED require 3 channel. (One for each color)
This gives a total of 341 LEDs or a matrix of round 18x18

Check out the nled pixel controller

This guy is awesome!
I'm currently building wash lights using 12v rgb led strips ( not addressable ) using the nled 4ch wash mini.
You'll have to set it up as a fixture in Freestyler, but it works great!

You need to add a decorder, convert DMX signal to SPI,then control ws2813 or ws2815 led strip directly.
